How to use: 4 simple steps to incredible smoked seafood

• Step 1: Set up your barbecue for cooking over indirect, gentle heat
• Step 2: Simply soak in a tray with water for up to an hour (minimum half an hour) before cooking
• Step 3: For best results on a gas barbecue, transfer the soaked blend to a Weber Universal Smoker Box (purchase separately) and locate at the back of your barbecue. On a charcoal grill, simply spread pre-soaked chips onto the lit coals
• Step 4: Add food to the cooking grate, close the lid and let the barbecue do all the work as the smoke steadily flavours the food on the grill
