If you're cooking over Charcoal, one of the accessories you won't want to be without is the Weber Chimney Starter. This allows you to get your coals glowing in around 10 minutes without the usual fuss and bother that puts many people off Charcoal BBQs.
You simply need to add the coals to the chimney and put it over a small heat source such as crumpled paper or barbecue lighter cubes. The heat will rise evenly around the coals getting them quickly up to cooking temperature, at which point you can simply pour them into the barbecue.
Although many people simply cook with direct heat over the coals, you can also cook on a Weber Kettle Barbecue with indirect heat. By simply scraping the coals to the sides of the barbecue you can place a joint or even whole chicken into the barbecue, pop on the lid and leave to roast as you would in a normal oven, but with the wonderful smoked taste of a charcoal grill.
By placing a drip tray under the cut of meat, you'll catch all the juices, which can be used in sauces. This also saves on mess and cleaning up time, when you've finished. Adding water to the drip tray helps regulate the temperature of your charcoal barbecue and also maintains moisture in the meat.
